Mirabelle plum jam
This is a specialty from Lorraine. Depending on your tastes, a vanilla bean split in two can be added at the beginning of the reparation.
Ingredients :
- Sugar: 750 gr
- Mirabelle plum: 1000 gr

- To get a good jam, you need to find very ripe Mirabelle plums. The more naturally sweet the Mirabelle plums, the better your jam will be.
- Carefully wash the Mirabelle plums by using a colander under running water and drain them.
- Pit them and weight them.
- Place the Mirabelle plums in a jam cauldron (a pressure-cooker or a large saucepan are also fine), add the sugar and mix well.
- This step is not required: You can let the Mirabelle plums and the sugar macerate overnight (approximately 12 hours).
- Cooking the Mirabelle plums jam:
Bring the Mirabelle plums and sugar mixture to a boil and maintain for 20 minutes by string regularly. - After 20 minutes of cooking, reduce the heat a bit and do the cold plate test to check if the Mirabelle jam is cooked. (This test is to put a drop of jam on the cold plate, if it stays, it is ready!)
- Preparation of jars: Ideally, the jam jars and the lids should be scalded. Then, let dry before filling the jars.
- Now that your Mirabelle jam is ready, you can fill the jars. Pour the Mirabelle jam into the jars, close them and turn them upside down. Wait until the jam is cold to store the jars.
- For those who like it, a vanilla bean can be added at the beginning of the recipe before they are macerated.
