Milk jam
It is also known as Dulce de Leche. The origin of the milk jam stays mysterious: It can be found on every continent. It is high in carbohydrates and will delight children and athletes. Try it on bread or crepes.
Ingredients :
- Sugar: 500 gr
- Milk: 1 litre

- Pour the milk into a high pan so that the milk does not boil over.
- Add the sugar and the vanilla. If this is a vanilla bean, split it in two and remove the seeds. Add the mixture to the preparation. Remove the vanilla sticks once the mixture starts reducing.
- Bring to a boil by stirring to dissolve the sugar.
- As soon as the milk reaches the boiling point, reduce the heat.
- Cook about 2 hours over low heat.
- The sugar quickly transforms into caramel if the heat is too intense. Stir occasionally.
- The milk jam is ready when it becomes thick and takes a beautiful caramel colour.
- Mix well, then pour the preparation into the jars and close them immediately.
It must be eaten cold. After opening, conserve the milk jam in the refrigerator.
