Chestnut jam
Chestnut cream, chestnut jam or sweet chestnut jam, to make head or tail of it! The sweet chestnut is beautiful and the fruit used for this recipe. It has different names and a unique taste appreciated by everybody.
Ingredients :
- Sugar: 750 gr
- Chestnut: 1000 gr
- Water: 180 ml
- Vanilla bean: 1

- Make a deep cut on the chestnuts on opposite sides and plunge them into boiling water for 10 minutes.
- Peel the fruit. Now it should be easy to lossen the shell and the skin of the chestnut. Make them into compote with a mixer or a food mill.
- Weight the preparation. Make syrup with 750 gr of sugar and 180 ml of water per kg of fruit obtained. The syrup is ready when the preparation gets thick and becomes translucent.
- Add the fruit to the syrup and a vanilla bean cut in half lengthways and cook for about twenty minutes.
Pour in jars and close them. After opening the jars, keep them in the refrigerator.
